Some cakes are inspired by recipes I want to try, some are inspired by tutorials I've found online, and others come to me during the many hours of the night that I spend staring at the ceiling. This probably won't be the first time I mention my insomnia in this blog, as that's when I get a great deal of cake inspiration.
This cake popped into my head one evening around 3AM. I was thinking about what to do with the extra cake layers and icing in my freezer from two separate birthday cakes that I had made just a couple of weeks before when I realized that I had the makings of Lindsay Lohan's dream dessert - Oreo cake layers and peanut butter icing!
Aside from my 3AM inspiration, I had no real plans for this cake. I didn't plan any specific decoration or think of an upcoming event to bring it to - I simply pulled everything out of the freezer one Sunday when my husband was glued to the TV watching football.
It came together better than I could have expected. Not planning out specific decoration is a hit or miss for me, so I was pleasantly surprised with how well it turned out! After I was done admiring my work, I realized I had no one around to eat it (I learned the hard way during my first cake decorating experience that a six inch cake is way too large for two people to consume on their own.... My husband, Parker, still reminds me of this). We had just moved into our home in North Carolina and I didn't necessarily have an abundance of friends to pawn my sweet creation off on, so I turned to the internet. I started googling organizations around me that accepted food donations, but almost everything conflicted with my work schedule. Finally, I posted a photo of the cake in a Facebook group comprised of fellow military spouses in our small little town. Almost immediately I started receiving messages from complete strangers speaking incredibly kinds words of people in their lives who were deserving of a sugary pick me up!
I honestly have no idea how many messages I sifted through that day, but it was probably at least 50. Each and every one of them made me want to drop what I was doing and bake cakes until all of the requests were fulfilled, but I finally landed on the first woman who messaged me. Her name was Sally and she spoke of her friend, Sarah, who was working full time and also raising three children under the age of 4 on her own while her husband was away for work. Sarah was described as someone who would show up to your house with a home cooked meal if she heard you were having a bad day. I knew I had my winner.
The world needs more people like Sarah. She has so much on her plate, yet instead of feeling sorry for herself, she constantly thinks of others. I can't even imagine how much she goes through in a day with three children to care for while her husband is away. I don't even have children, but when my husband is gone for more than a few weeks, I feel like I've lost a limb!
Anyways, this cake happened to be delivered on Sarah's twins' birthday! I was so happy to know that this beauty went to someone so deserving. I hope it brightened her day half as much as she brightens the days of those who know her!
